Bak Kut Teh, a Chinese herbal pork soup, was introduced into Malaya in the 19th century. At the time it was eaten by Chinese manual labourers as a tonic to maintain their health and strength. Today, Bah Kut Teh is enjoyed by people from all walks of life. The various herbs used in the dish have well-recognised medicinal and tonic effects, and some regard the dish as not just a meal, but a health supplement.
At Pao Xiang, the meat is tied with string in the traditional way before cooking, This helps the meat keep its shape and flavour, and purportedly ‘squeezes out’ some of the fat. House specialities at Pao Xiang include Bak Kut Teh, Sui Kut, Ka Geng, and Pao Hier.
